Have you ever wondered what it was like to live and work on a farm? Keswick Creamery is now accepting applications for 2008 internships at Carrock Farm, LLC. We are a 40-cow dairy farm with a small on-farm processing plant. Our Jersey cows are rotationally grazed using mostly organic practices. Using our own milk, we produce raw milk aged cheeses, pasteurized fresh cheeses, yogurt and other value-added products that are sold in regional farmers markets and to local restaurants. This is an opportunity to be part of the complete process--from the grass to the consumer. You will learn how to make assorted types of farmstead artisan cheeses, yogurt and value added products and acquire skills for rotational grazing, dairying and animal husbandry. This internship requires weekly attendance at farmers markets and will provide an excellent overview to successful direct marketing. Interns will also be given the opportunity to develop their own cheese recipes. Other farm activities available include laying hens and a large market garden as well as on neighboring farms raising meadow-raised veal, meat goats and pastured poultry. Internships begin in April/May and run through October/November with a six-month minimum commitment. The application deadline for this year is April 30, 2008 and we will be accepting two interns. Interns will be provided with their own room in a three bedroom house with a shared kitchen and bath as well as a weekly stipend.
